I'm up just a smidgeon today. No biggie. No run for me today and I plan to abstain tomorrow as well. I want a few more days of rest and stretching to see if my foot gets better.
It was an easy day around here. It started with menu planning, grocery shopping and meal prep and ended with a nice drink and some couch time. I don't meal prep nearly as much as I used to but I wanted to do a few things to make the week easier. I cooked chicken breast 3 ways, a tuna noodle salad, a sweet pea salad, pizza pasta for the kids, brussels sprouts and bacon, boiled some eggs and cooked halibut for dinner.
On Pinterest, I saw a different way to cook chicken that I liked. You cube the chicken, toss it in oil (I did olive oil but will try coconut at some point), mix in your seasoning and then put it all on a sheet pan separated by aluminum foil. I baked it at 400 for 20 minutes. Next time I'll cut the time down by 2-3 minutes.
The Sweet Pea salad turned out really good too. That's greek yogurt mixed with red wine vinegar and not just a bunch of mayo.
